# How to Make It:

01 - Combine rinsed quinoa, water, and 1/2 teaspoon salt in a medium saucepan. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Remove from heat, let stand covered for 5 minutes, then fluff with a fork and cool to room temperature.
02 - Place cherry tomatoes, cucumber, red bell pepper, red onion, parsley, and mint (if using) into a large mixing bowl.
